Pretty sure I could make a meal out of just dips. Oh wait, I HAVE on several occasions with my small group. When we get together every Wednesday, we all pitch in to make a meal. This week was our “appetizer” type dinner. We had salsa, sausage balls, little weenies, a Smores dip and then my corn dip.
I originally found out about this dip from my dear friend, Sarah. She had made it at one of her parties and told me that she brought the recipe back with her from Spain.
I had to have the recipe and I’ve been making it ever since. I could probably make this dip in my sleep, it’s so easy. (And I’ve made it a few times)
It’s only 4 ingredients which is even better.

I just had this last night, but it looks like I’m going to have to make some more. My screen has a bit of drool on it.

Cheesy Corn Dip
1 block cream cheese
1/2 stick butter
1/2 can drained white shoepeg corn
3 tablespoons diced jalepenos
Melt cream cheese on medium high heat in a saucepan until very soft. Careful because it will burn fast. Toss in the butter. Melt both together very well, stirring frequently. Add corn and jalepenos, heat through.
Serve immediately with tortilla chips or put in small crockpot on low to serve later. This feeds 2-4 people. Recipe is easy to double.
