Usually most of my creativity in the kitchen is inspired by this one avocado sitting on the kitchen counter, ripened and ready to be used. Every time I go to the grocery store I buy an avocado, which ends up sitting on my cabinet getting to the point of almost too ripe which again results in lots of creativity taking place in the kitchen. It’s an endless cycle.
I really don’t use avocado in everything, but I sure do love and treasure this fine specimen of a food.
To put a bit of a spin on my traditional Salmon Cakes, I decided to try a lime and cilantro inspired theme tonight.
It ended up being extremely scrumptious but super simple. Braeden even helped out with this one. He has become quite the connoisseur of lime, avocado, and cilantro. Couldn’t be because I use those all the time.
Here’s the recipe:
Cilantro Lime Salmon Cakes
14 oz. canned Salmon
1/2 cup of breadcrumbs
juice of 1 lime
1/2 cup of finely chopped cilantro
salt & pepper
Mix all ingredients together. Shape into hamburger patties. Refrigerate at least 15 minutes.
Heat 2 tablespoons of olive oil in a skillet or griddle like pan on medium high. Cook for 4-5 minutes on each side.
Serve on a bed of lettuce with lime, guacamole, salsa and chips.
And if you’re feeling spicy:
Spicy Mayo Sauce
1/2 cup of mayo
4 Tablespoons of Tapatio Hot Sauce
Mix well, Enjoy!
